Sobeys Recipe Corner: Grilled Shrimp & Kale Ranch Salad
1 bag Sensations by Compliments Uncooked Extra Large Black Tiger Shrimp (26/30 ct), thawed 454 g
1/3 cup Sensations by Compliments Southwest Spicy Marinade 75 mL
1 box baby greens such as Compliments Organic Mixed Baby Kale 142 g
1 cup croutons such as Compliments Cheese & Garlic Croutons 250 mL
1/3 cup Compliments Ranch Dressing 75 mL
1 avocado, pitted, peeled and diced
lime wedges for squeezing
Toss shrimp with marinade. Grill on medium-high heat 3 to 5 min., turning occasionally, until cooked through ( internal temperature reaches 165°F /74°C). Remove from grill.
Toss together kale, croutons and dressing. Divide among 4 plates. Top with shrimp and avocado. Serve with lime wedges.
Substitute with Sensations by Compliments Uncooked Freshwater Shrimp (8/12 ct).
