Niagara College Wins Great Amazing Duck Race
Nine teams of Ontario’s top culinary students ran King Cole Ducks Ltd.’s Great Amazing Duck Race, with Niagara College’s Canadian Food and Wine Institute team capturing first place.
The race was the ultimate farm to fork recipe competition taking students through the experience of collecting duck eggs, showcasing knife skills in King Cole’s federal plant, visiting the company’s original home stead, racing to Toronto, shopping for ingredients at St Lawrence market and finally cooking their masterpieces at George Brown College.
Judges of the final dishes included Chef Brad Long, Café Belong; Lucy Waverman, Food Journalist; Chris Zielinski, Culinary Director of MLSE and King Cole’s CEO Debbi Conzelmann who declared that the students created , “duck appetizers and entrées of incredible creativity, texture, presentation and taste, many beyond our expectations.”
1St Prize ($500 per student) – Niagara College’s Canadian Food and Wine Institute: Katherine Kidnie and Jung Hoon You
App: Three King's Cole Duck - Pulled duck pot sticker, sweet sour sauce, duck bacon & egg brekkie, pickled market vegetables, southern fried duck liver, caramelized onions & apples Entree: Cinnamon smoked king cole duck breast, toasted coriander orange king Cole duck leg, butternut squash puree, farmers market vegetables, cherry sauce
2nd Prize ($250 per student) – George Brown College: Victoria Agabalyan and Michael Abelev
App: Braised duck leg with beet roll, lemon mayonnaise, crispy shallots, and organic vinaigrette Entree: Seared duck breast with mushroom ragout, leek custard, potato nest, and cherry jus
3rd Prize ($100 per student) – Fanshawe College: Mandar Patil and Shruti Kijbille.
App: Deconstructed duck quiche with caramelized onions, poached duck egg, and "Pis En Lit" salad with pomegranate dressing Entree: Thai spiced marinated grilled duck and vegetables in red thai curry and jasmine rice
Other participating colleges included : Durham College, Durham; Fleming College, Peterborough; Centennial College, Scarborough; Humber College, Toronto.
